From the moment David and Cindy started Covington Cellars they dreamt of one day having a vineyard, but growing grapes doesn’t happen in Seattle. Vinifera grapes need lots of sun, dry soil, and drainage. So, they knew they’d have to move to make that dream a reality.

In the early years they assumed that one day they’d move to Walla Walla, WA - and in fact, they have a property in the Rocks District of the Walla Walla Valley. But as Cindy watched the Texas Wine industry grow over the last several years, she became more and more convinced that a wine life in Texas was for them. So back home she went.

 In 2018, her and David finally found their new vineyard home and purchased 52 acres in the Texas Hill Country.

Creating New Opportunities

Estate Vineyards

The Hill Country is a growing AVA in Texas, with more and more wineries planting vineyards each year. The Texas High Plains faces challenges when it comes to cross contamination from cotton to wine grapes, so it was essential that they bring in the best vinifera growing leaders in the area. They then partnered with Atlas Vineyard Management to plant and manage the vineyard. 

Atlas has been growing Vinifera in CA for years and moved into TX in 2020.  “Growing grapes in Texas aint’ for sissies” Cindy quips, “I hired the best people I could find, but we still need your prayers please.” 

They broke ground in the fall of 2022 and planted rootstock in the spring of 2023. They plan to graft the vines in the spring of 2024. The estate vineyard will grow Cabernet Franc, Cabernet Sauvignon and Syrah, reaching producing maturity in 2028.
