Covington cellars was founded on two varietals: Sangiovese and Cabernet Franc. David is truly passionate about Sangiovese, in the classic Italian form, and you’ll notice several of the wines in our portfolio include the varietal. It’s been a favorite because of its diversity. It’s extremely food friendly (pairing easily with hard-to-pair foods such as tomatoes and tomato-based sauces) and yet its light enough to enjoy without any food. When David created the first vintage of this wine, he strived to emulate how the Italians make it. Thus, our Sangiovese holds a little more acid with bright fruits.
