Covington Cellars was founded on two varietals: Sangiovese and Cabernet Franc. David is truly passionate about Sangiovese and you’ll notice that we have several wines that include Sangiovese in the winery today. Sangiovese is a favorite because of its diversity: it’s extremely food friendly (pairing easily with hard to pair foods such as tomatoes and tomato based sauces) and yet its light enough that you can enjoy it without any food at all. The 2017 vintage is a classic example of our Sangiovese, with bright cherry and red fruit, a touch of earthiness, and a steely backbone of acidity. This is Washington Sangiovese at its best.
